Paul Lato is one of California’s finest artisanal winemakers. He is a hybrid of a poet and a chemist. His elegant wines showcase his genuine passion for what he does with labels signing off “with love and gratitude.” He created a series of “pop-up” wines that are not part of his established library that provide a platform for experimentation and a bit of fun.
Collaboration:
Created custom label designs for small-batch production wines. Each label has a theme and unique stye. Paul’s conceptual inspirations come from his life experiences and often shared initially in sketch form. From moon vineyards to sipping on the sea - turned discoteche - the creative process is as exciting as the wines themselves. The colors often express the flavors and essence of the wine. Each debut, a cinematic treat.
"The 2020 Space Cadet is the star in this range from Paul Lato. Silky and aromatic, the 2020 is hauntingly beautiful from the get-go. Inky red/purplish fruit, sage, cedar, tobacco, incense and dried flowers are some of the many notes that race across the palate. All the elements are so well balanced. Space Cadet is mostly Syrah and some Grenache, but the Grenache really seems to drive the profile today."

"This vintage of our 'Boogie Nights' brings classic Malvasia Bianca floral aromas and exotic flavors, enhanced by citrus notes of orange blossom, and freshly cut apricots. Medium bodied with notes of passion fruit, mango, and white pepper. This balanced, savory, and well-structured wine finishes strong with Meyer lemon and mandarin orange. Delicious and elegant, great pairing for most seafood dishes."
